Chocolate Chip Chia Cupcakes!!

The new super seed, Chia is packed with more calcium than milk, more omega-3s than salmon and more fiber than prunes.


Ingredients 
Makes 12 servings

1/2 cup coconut flour
1/2 cup coconut palm sugar
1/2 cup dark chocolate chips, chopped
2 eggs (free-range, organic), beaten (room temp)
1/2 cup coconut oil
1/4 cup water
2 tbsp chia seeds
1 tbsp vanilla extract


Directions 
Preheat oven to 350°F.

Coat a tiny bit of coconut oil in slots in muffin pan or place cupcake wrappers in pan.

Mix 1/4 cup water with one tablespoon of chia seeds. Let sit for 10 to 20 minutes, until it forms a "gel."

In the meantime, mix dry ingredients in a bowl (coconut palm sugar, coconut flour, chocolate chips and one tablespoon chia seeds).

In a separate bowl, mix wet ingredients (eggs, coconut oil and vanilla extract).

Combine all ingredients and mix.

Pour mixture into muffin pan until each is approx 3/4 full.

Bake for 20 to 25 minutes. Let cool.

Top with some extra chocolate chips.

Avocado and Salmon Salad Recipe!

This simple dish can be made a little more elegant with freshly poached salmon instead of the canned. But canned or fresh, salmon is delightful, refreshing and super healthy, especially in this salad!

Ingredients
Makes 4 1/2 cups

Juice of 1 lime
1 tsp honey
Pinch of cayenne pepper
1 (12-oz) can salmon, drained and broken into bite-size pieces
2 avocados, cut into chunks
1/2 red onion, sliced

Optional topping
3 tbsp raw sunflower seeds

Directions
In a small bowl mix together the lime juice, honey and cayenne until well combined. Set aside.

In a large bowl assemble the salmon, avocado and onion slices and gently toss with the lime-honey dressing. Refrigerate for about 30 minutes for all the flavors to come together.

If desired, sprinkle sunflower seeds over salad before serving.
